Do you have a special place on your palate for wedding cheesecake or a cheesecake wedding cake? Are you wondering about the possibility of creating a wedding cake using this rich, classic delight? Your wedding cheesecake doesn't have to look like a cheesecake, and you don't have to get married in New York to offer cheesecake wedding cake at your wedding.

Cheesecake can be used for many types of cheesecake wedding cake designs. However, there is one special consideration. The top tier of the wedding cake is traditionally saved by the bride and groom for their first anniversary, but freezing this will compromise the cheesecake's texture. Some bakers solve this problem by including a top tier of regular cake at no additional charge.

There are a variety of ways you can have the top tier decorated so that it matches the wedding cheesecake tiers. A floating or satellite cake stand will show off each tier with its beautiful berries because the tiers won't be directly over each other.

Cream-cheese icing made with white candy melts and cream cheese is often used for frosting tiers and piping simple decorations. White-chocolate buttercream frosting is another popular choice.

New York-style cheesecake is a classic cheesecake style, so a New York theme for your cake could be fun. Picture an elegant white tiered cheesecake wedding cake with fondant (a pliable sugar paste) molded into the shape of a black top hat for the top tier. Bride and groom figurines "dance" on top of the hat. Long gloves in white or a wedding color, made of fondant, are draped from a lower tier. This is just an example of an idea that can be created without even spending time searching for pictures of wedding cakes.

If you are having a theme wedding, you may want to have your wedding cake created to complement this theme. Again, all it takes is a little imagination. A nice wedding cheesecake choice for a Valentine's Day wedding is to have heart-shaped, white-frosted tiers topped with a red berry filling such as raspberry or strawberry. A summer-theme wedding might inspire a yellow-frosted lemon cheesecake, while a wedding in Hawaii will make it easy to find a baker who can create a lilikoi (passion fruit) cheesecake topped with orchids.

Keep in mind that a tiered cheesecake wedding cake has the benefit of offering more than one flavor to guests. You can find a good baker who is willing to create tiers of differing flavors as long as they don't hinder construction. Popular cheesecake flavors include:
